Finally, divide the dough into two pieces, one slightly larger than the other. Wrap it in a plastic and leave it to chill for 30 minutes. Peel the apples and cut into medium sized pieces (approx. 8 pieces). Mix the apples with lemon juice in a large bowl to prevent it from discoloring. Place butter and sugar in a fry pan over a medium heat. When the butter has melted, pour the apples and spices (cinnamon.  Cook, stirring occasionally, for 10 minutes or until the apples are softened and obtain a faint brownish color. Then leave it aside to cool. Take a metal pie dish and unroll the dough over the pie dish. Gently press over corners and edges; make a base of almost 2mm. Then place the filling with the help of a spoon. Make sure that the filling is uniformly distributed. Cover the filling with a layer of pastry piece (dough). Beat egg and milk to brush the rim and upper layer. Lift the pie dish and cut excess pastry from edges with a sharp knife. Crimp the edges of pastry together with your fingers. This gives a firm shape to your pie. Leave it to chill for 30 minutes. Preheat the oven to 180°C, place pie dish on a baking tray. Brush top of you pie with more beaten egg and sprinkle with sugar. Make some holes in the center of the pie using a knife and bake for 45 minutes or until the pie becomes golden brown in color. Take the dish out from the oven. Don’t forget to use gloves because it is too hot. Now your pie is ready. After cooling for around 5 minutes take the pie out of the pie dish and cut into pieces. Serve it with whipped cream or ice cream on top. Happy cooking. Cheers!!
