My Favorite Nepali Cuisine - Thakali

Nepal is culturally and geographically diverse. It is a land rich in music, architecture, religion and literature. Due to such diversity, every state has its own cuisine, which represents a different and unique layer of our country. Some of these traditional cuisines which are popular in Nepal are: Pahari Cuisine, Mountain Cuisine, Thakali Cuisine, Newa Cuisine, Tharu Cuisine, Lohorung Cuisine and many more. Irrespective of the cultural and ethnic diversity in Nepal, the basic everyday meals is lentils, rice, and curried vegetables known as “Dal, Bhat and Tarkari” which in most households, is eaten twice a day. Nepali foods are moderately spicy and mostly Tibetan in origin. As a Nepali, my favorite cuisine is Thakali. Thakalis are one of the ethnic groups of Nepal, originally from Thak Khola on the banks of River Kaligandaki in Mustang District. They are known for their delicious cooking all around Nepal. A typical Thakali food consists of Buckwheat finger chips (kyachhamba), long grain white basmati rice, lentil soup made from "kalo mas"(split urad dal), spicy fried potatoes, spinach, chicken or goat meat (for non-vegetarians), boiled rice, condiments, fresh white radish pickle, fresh tomato relish, additional spiced curry vegetables and salad. Many restaurants in Nepal are named Thakali, representing the delicious cuisine. Among many others cuisines popular throughout Nepal, Newari cuisine is also one of them. Newari food is mainly popular mostly inside the Kathmandu valley. Nepal is also a country of festivals, which means gathering of family members and enjoying along with one another and exchanging love. Food adds spice to our happiness. Food is also a sign of our hospitality. Nepalese value hospitality the most and sharing their food is one way to show their respect and love for guests. Our uniqueness in food is part of our identity and we should strive to preserve it for the forthcoming generations.
